Appe Rasa

Summer in Karnataka has a flavour and it tastes exactly like Appe Rasa. Known as Appekayi Saaru or Appe Huli in the Malnad and coastal Karnataka households, Appe Rasa is a traditional raw mango drink and rasam concentrate made from wild Appe Midi mangoes the same prized pickling mangoes of the Western Ghats. Tangy, spicy, slightly sweet, and deeply aromatic, it is one of those rare things that works equally well poured over hot steamed rice or sipped straight as a cooling summer drink.
